Porridge has got super trendy during lockdown with everyone giving the humble dish a stylish twist.

First, breakfast lovers were baking their oats in the oven, now they are chilling them in the fridge.

Instagram foodie @cakeontherun loves all things oats and is known for her quick, easy and healthy recipes.

She has already shared her raspberry and cream overnight oats and banana bread overnight oats with us, now she has revealed her apple pie overnight oats recipe, and it is a must-try.

Containing two of you 'five a day', the creamy delight is full of fibre, low in fat and will keep those hunger pangs at bay until lunch.

Plus, it can easily be made gluten-free and vegan friendly with a slight adjustment. Perfect for people looking to eat a bit healthier this year, you simply make it the night before and tuck in when you wake up the next morning.

As well as a delicious, comforting breakfast, it can also be enjoyed as a yummy dessert too.

Creamy and delicious apple pie overnight oats

Apple pie overnight oats recipe (serves 1)

*Quick *Easy *Healthy *Low fat *Low sugar *Meal prep * Child-friendly *Breakfast *Dessert *Cheap

Ingredients:

  • 50g any porridge oats.
  • 6 tbsp boiling water.
  • 2 tbsp any low-fat plain or vanilla yoghurt.
  • 1 grated apple or 2 tbsp apple puree.
  • 1 tbsp sultanas.
  • Pinch of cinnamon.

Method:

  1. In a bowl pour the oats and hot water in it and stir so it thickens.
  2. Once thickened, stir in the yoghurt, apple, sultana and cinnamon.
  3. Pour it into a jar or container, pop a lid on it and leave in the fridge overnight.
  4. Eat it as it is or sprinkle over some brown sugar, drizzle over some milk and add some sliced apple.

Make it vegan or gluten-free

Gluten-free - use gluten-free porridge oats.

Vegan - use a dairy-free yoghurt such as soya, almond or coconut.
