1 head cauliflower, chopped into florets

1 tablespoon olive oil

1/8 teaspoon salt

1/8 teaspoon pepper

4 ounces cream cheese

1 cup plain Greek yogurt

1/2 cup buffalo wing sauce

1 tablespoon ranch seasoning

3/4 cup shredded mozzarella cheese, divided

1/4 cup crumbled blue cheese (optional)

Sliced green onion for garnish (optional)

Carrot and celery sticks and/or tortilla chips for serving

Now that we have the ingredients, we will start by preheating the oven to 450 degrees. Next, we will line a baking sheet with parchment paper. Toss the cauliflower florets, olive oil, salt and pepper onto the baking sheet. We will put the sheet in the oven and let it bake until it is tender or slightly browned (15-20 minutes. Once the cauliflower is done, lower the oven temperature to 350 degrees.

Put the roasted cauliflower into a food processor and pulse until it is finely diced. Add in the cream cheese, yogurt, hot sauce, ranch seasoning and 1/2 cup of mozzarella into the food processor and pulse until the mixture is smooth. Next, we will transfer the cauliflower mixture into a baking dish. Top the mix with the remaining mozzarella and blue cheese. Bake the dip in the oven until it is heated through (25-30 minutes). Once the time is up, remove the dip from the oven and garnish it with the sliced green onion and serve it with the carrot and celery sticks or tortilla chips.
