The Hindus dedicate Vasant Panchami to Saraswati who is considered to be the Goddess of speech, knowledge, music and art who provides voice, intelligence, force and glory. Yellow or basanti is believed to be Saraswati's favourite colour hence, all celebrations include a shade of yellow be it in decorations, attires or the worshippers and even food.

Among all the many dishes considered traditional to the celebration of this Spring festival, our favourite is Kesari Sheera. You'd be lying if you said you don't drool at the thought of a celebratory feast.

With Vasant Panchami at our doorstep, bring wide smiles to the table by treating your family and friends to the dense and sweet Kesari Sheera which is a semolina dessert subtly flavoured with saffron, generously garnished with almonds and cashewnuts and every bit rich.

Ingredients:

Saffron 1 cup

Semolina a few strands

Milk 1 cup

Ghee 1/3 cup

Almonds slivered 5-6

Cashewnuts chopped 5-6

Raisins 5-6

Sugar 1/3 cup

Green cardamom powder 1/2 teaspoon

Method:

Dissolve saffron in a tablespoon of milk. Heat ghee in a kadai. Fry almonds, cashewnuts and raisins. Drain and keep aside.

Add rawa to the same ghee and roast it till it is golden brown. Heat remaining milk with one cup of water. When it comes to a boil add it to the roasted rawa.

Cook, stirring continuously, so that rawa separates out. Add soaked saffron, sugar and green cardamom powder. Mix well. Continue to cook till all the water has been absorbed.

Garnish with fried almonds, cashewnuts and raisins. Serve hot.

Vasant Panchami marks the beginning of Spring season in India and the blooming of the mustard flowers that resemble beds of yellow flowers when in full bloom. People wear yellow coloured clothes and also eat food that has the colour yellow in it (like khichdi) as yellow symbolises prosperity, optimism, energy and everything positive.

Strawberry icebox cake

Strawberry Icebox Cake reminds us of the New York Cheesecake but on a budget, and all you need are three simple ingredients to make this creamy strawberry dessert.

Ingredients 

5 cups sweetened whipped cream (300 g), 11 large rectangular graham crackers, 3 cups chopped strawberry (450 g). 

Directions

  1. Spread a thin layer of whipped cream in a square glass baking dish.
  2. Layer graham crackers on top, then cover with a layer of whipped cream.
  3. Sprinkle one-third of the strawberries on top, then layer with cream again.
  4. Repeat steps 2 & 3 until no more ingredients remain. (The top layer should be strawberries and should not be covered with cream.)
  5. Refrigerate for at least three hours and serve chilled. Enjoy!

Peanut butter trifle

Fan of peanut butter? Try this salty-sweet dessert that incorporates protein-filled peanut butter and loads of tasty chocolate.

Ingredients

2 & ½  Milk Chocolate Brownie Mix, 2 packages Miniature Reese's Peanut Butter Cups (13 oz each), 4 cups milk, ½ cup instant vanilla pudding mix, 1 cup creamy peanut butter, 4 teaspoon vanilla extract, 2 cartons of whipping cream (13 oz each).

Directions

  1. Prepare brownie mix according to package directions using a 9×13 inch pan. Make sure not to over bake the brownies.
  2. Cool on a wire rack and cut into three-quarters of an inch pieces.
  3. Cut Reese's peanut butter cups in half and set aside one-third cup for garnish.
  4. In a large bowl, whisk milk & pudding mixes for two minutes. Add peanut butter & vanilla extract and mix well. Fold the mixture with one & half cartons whipped topping.
  5. Place a third of the brownies in a trifle bowl and top with a third of the remaining peanut butter cups. Spoon a third of the pudding mixture over the top. Repeat layers twice. 
  6. Cover with remaining whipped topping and garnish with reserved peanut butter cups.
  7. Refrigerate until chilled and serve!

Cookies & ice cream pie

Ingredients 

20 chocolate sandwich cookies, 1 cup melted chocolate (170 g), approx. 6 cups of softened ice cream. 

Directions

  1. Place cookies in a plastic bag and hit with a rolling pin or pan until crushed.
  2. Pat the cookie crumbs into the bottom of a nine-inch pie dish.
  3. Spread the softened ice cream on top and smooth out.
  4. Drizzle the top with melted chocolate.
  5. Freeze for four hours, or until the ice cream is hardened. Serve & enjoy!

  3. Add your chopped nuts and reserve a few for garnish.
