Whether you're an expert home chef or more of a dabbler, spring is the perfect time to visit a farmers market and try out a new recipe that incorporates healthy and colorful food into your menu. Asparagus is one of the first plants that greets us in the springtime. Enjoy some tasty recipes from Lunds & Byerlys featuring the vegetable.

Celebrate the official start of spring (March 20) with a delicious recipe featuring seasonal asparagus.

Asparagus is a versatile vegetable. It can be grilled or roasted, tossed into salads or baked into quiches.

Lunds & Byerlys White Bear Lake "Food-E" Expert Ken Grogg has an easy, versatile recipe for a Cheesy Asparagus Tart that combines a few simple ingredients to create a delightfully flaky, cheesy tart. 

Grogg keeps it simple and uses frozen puff pastry dough as the base, which makes it not only easy to prepare, but also delightfully flaky and buttery.

He also uses Gruyere – a nutty, mild Swiss cheese – to tie the dish together. Gruyere is a great melting cheese, which makes it perfect to nestle the asparagus right into.  

The springtime dish is perfect for Easter brunch, served as an appetizer or paired with greens for a simple supper.  

INGREDIENTS:

  • 1 sheet frozen puff pastry, thawed
  • 10-12 asparagus spears
  • 1-2 cups shredded Gruyere cheese 
  • Olive oil
  • Salt and pepper

DIRECTIONS:

Heat oven to 400 F.

Meanwhile, bring a sheet of puff pastry to room temperature. Gently unfold or roll out the dough, and using a sharp knife, score it about 1 inch from the edge, making a rectangle all the way around. This will be the "crust" once the pastry bakes.

Inside the rectangle, pierce the dough every ½ inch or so to prevent bubbles.

Bake the dough at 400 F for 15 minutes.

Sprinkle the baked pastry with 1-2 cups of shredded Gruyere.

Lay full asparagus spears on top of the cheese and brush with olive oil.

Sprinkle with salt and pepper to taste.

Bake at 400 F for 20 minutes and serve.

In addition to writing several cookbooks, Ellie Krieger has hosted shows on the Food Network as well as PBS. She's a registered dietitian and nutritionist and her recipes are themed to healthful eating, dishes that showcase vegetables, fruit, beans, nuts, lean protein, low-fat dairy and healthy oils.

Several years ago, she cooked in my kitchen, filming a video featuring a recipe from her cookbook, "So Easy" (Wiley, $29.95). She made a delicious stew with butternut squash. Over the years I have prepared many of her recipes. My absolute favorite is her version of white chili, a tasty concoction the uses a good dollop of nonfat Greek yogurt as a garnish. I love the flavor this unexpected finish adds to the dish.

Ellie Krieger's White Chili

Yield: 6 servings

INGREDIENTS

1 tablespoon olive oil

1 medium onion, diced (about 1 1/2 cups)

2 stalks celery, diced (about 1/2 cup)

3 medium poblano peppers (about 4 ounces each), seeded and white ribs removed, finely diced (about 1 1/2 cups), see cook's notes

1 clove garlic, minced

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon cayenne pepper, more to taste

1 pound ground white meat turkey

2 (15.5-ounce) cans white beans such as cannellini, preferably low-sodium, drained and rinsed

4 cups low-sodium chicken broth

3/4 teaspoon dried oregano

1 (15.5-ounce) can hominy, drained and rinsed

Salt

1/4 cup nonfat plain Greek-style yogurt

2 tablespoons chopped fresh cilantro leaves

Lime wedges

Cook's notes: Poblano chilies are unpredictable in their amount of capsaicin, the component in chilies that provides spicy heat.  Over the years I have become more sensitive, so I have adapted the recipe to use 1 poblano chili plus one 4-ounce can of diced mild fire-roasted chilies.

PROCEDURE

1. Heat oil in large pot or Dutch oven over moderate heat. Add onion, celery, poblanos, and cook, stirring occasionally, until the vegetables are soft, about 8 minutes. Add garlic, cumin, coriander and cayenne and cook, stirring, until fragrant, about 30 seconds.

2. Add ground turkey and cook, breaking up the meat with a spoon or spatula, until the meat is no longer pink, about 2 minutes. Add the white beans, broth and oregano. Cook, partially covered, stirring occasionally, for 25 minutes.

3. Add the hominy and salt and more cayenne pepper, to taste as desired, and continue cooking, partially covered, 10 minutes longer. Ladle into individual bowls and top each serving with 1 tablespoon of yogurt and 1 1/2 teaspoons of cilantro. Garnish each with a lime wedge.

TikTok recipes - Los Angeles Times

While many associate TikTok with dancing videos, new and unique recipes have blown up on the app. It seems as if everyone on TikTok has tried at least one. Most of the recipes are fairly easy and simple to make, which is part of the reason that they have become so popular.

Some of the recipes that have been trending include whipped coffee, Gigi Hadid's pasta recipe, mug cakes, feta tomato pasta and baked oats.

Feta tomato pasta is one of the many recipes that has gone viral. It only requires a few ingredients: pasta, feta cheese, tomatoes, garlic, olive oil and basil. There is also no exact amount required for each ingredient, so people can change it to their liking.

The first step is to put cherry tomatoes in a glass ramekin and make sure they are spread evenly. Then add a block of feta cheese to the middle and drizzle olive oil and sprinkle salt and pepper over the tomatoes and cheese, with garlic added in.

It should be baked in the oven at 350º for about 30 minutes. Once it is taken out of the oven, basil is sprinkled on top and it is ready to be enjoyed. 

Another popular recipe is baked oats, which is a new twist on traditional oatmeal. Each TikTok shows a slightly different recipe for baked oats. Trace Alexander has become famous on TikTok for his creative versions of this recipe.

A classic recipe for baked oats includes one cup of oats, one banana, a little honey or maple syrup, one egg, one teaspoon of baking powder, a splash of any type of milk and a splash of vanilla. There are also many other recipes that add cinnamon, cocoa powder, Oreos, fruit or a variety of other ingredients to personalize the baked oatmeal.

All of the ingredients are blended together in a food processor or blender. After it is all blended together, it is baked in the microwave for about 2-3 minutes. Add some cinnamon or chocolate chips on top and it is ready to go. 

"Nature's cereal" is also a very simple recipe that has gone viral on TikTok. It was created by an account called @natures_food, but it was made popular by the singer Lizzo who has a large following on TikTok with 13.2 million followers. Her first video demonstrating how to make the "cereal" has 5.4 million views.

All that is needed to make this is fruit of your choice and coconut water. Lizzo made it by putting pomegranate seeds, blueberries, strawberries, coconut water and ice into a bowl. The fruit acts as the cereal and the coconut water acts as the milk.

Though very simple, this recipe has shocked many TikTok users.
