Outside of India, the term "butter chicken" or "butter chicken curry" has become synonymous with "Murgh Makhani," the curry that originated from India.

How to Make Butter Chicken

Invented by chance, butter chicken was born when leftover tandoori chicken was mixed into a tomato sauce rich in butter and cream. And that's how the lip-smackingly delicious concept of butter chicken came into existence in the 1950s in Delhi, India.

Apart from the traditional butter chicken curry, there are a few other butter chicken recipes that aren't so typical (think vegan or vegetarian versions of the curry), and there are others that don't include a curry, but definitely involve butter and chicken. This easy chicken recipe is a one-pan wonder. Marinated thighs get roasted right alongside Brussels sprouts making it a low-effort meal with a very high reward. Reserve some of the marinade to brush over the chicken towards the end of baking. It makes a sweet, sticky, and downright irresistible glaze!

bone-in, skin-on chicken thighs

Kosher salt

Freshly ground black pepper

Juice of 2 medium oranges

Juice of 1 lime

1/4 c.

honey

2 tbsp.

low-sodium soy sauce

2 tbsp.

Dijon mustard

2 tsp.

freshly chopped rosemary, plus more for garnish

2 tsp.

freshly chopped thyme, plus more for garnish

Pinch crushed red pepper flakes

1 lb.

Brussels sprouts, trimmed and halved

1 tbsp.

extra-virgin olive oil

1 tsp.

cornstarch

  1. Trim thighs and season with salt and pepper. Place in a resealable bag. 
  2. In a small bowl or measuring cup, combine orange and lime juice, honey, soy sauce, mustard, rosemary, thyme, and a pinch of red pepper flakes. Reserve ½ cup of marinade or about half. Pour remaining marinade over chicken in bag. Let marinate at room temperature for 30 minutes or up to overnight in the refrigerator. 
  3. Preheat oven to 425° and line a large baking sheet with foil. Place Brussels sprouts on tray and toss with oil. Season with salt and pepper and spread into an even layer. Arrange thighs around Brussels, skin side up. Bake for 25 minutes. 
  4. Meanwhile, pour reserved marinade into a small saucepan over medium heat and bring to a simmer. Continue simmering until reduced by about half. Place cornstarch in a small bowl and carefully pour a couple of tablespoons of sauce over and stir to dissolve cornstarch. Pour mixture back into saucepan and continue simmering until sauce has thickened, about 2 minutes. 
  5. Brush sauce over thighs and bake again until internal temperature recaches 165°, 10 minutes more. 
  6. Garnish with fresh rosemary and thyme to serve.

Ina gives clear step-by-step instructions for how to make the yummy pastry crust. You will need a food processor fitted with a metal blade to mix the flour, salt, baking powder, shortening, butter, water, and egg.

Ina Garten's favorite weeknight dish is her 30-minute Parmesan chicken

Garten says that her intermediate recipe for Parmesan chicken is her absolute favorite 30-minute weeknight dinner. All you need is: six boneless, skinless chicken breasts, a cup of all-purpose flour, Kosher salt, freshly ground black pepper, good olive oil, unsalted butter, two extra-large eggs, 1 1/4 cups of seasoned dry bread crumbs, and 1/2 cup of finely grated Parmesan cheese.

To pound the chicken breasts to 1/4 inch thickness, you can use a meat mallet or rolling pin. You'll also need a large shallow bowl, two dinner plates, and a large sauté pan.

Garten's recipe for the perfect roast chicken is actually Jeffrey's favorite, and that's because it is absolutely legendary. This mouth-watering chicken dish is so amazing that Jeffrey requests it every Friday night.

The chicken takes just 20 minutes to prep, and the "roasting rack" of onions, carrots, and fennel turns into a yummy side dish. For a different flavor, Garten also has a recipe for lemon and garlic roasted chicken that's made with bacon.

Ina Garten's oven-fried chicken must be prepped the night before

Garten's oven-fried chicken is a must-try, but you will need a large heavy-bottomed stockpot for this recipe. The night before you want to serve this dish, Garten says to place the chicken pieces in a large bowl and pour a quart of buttermilk over them. Then, cover with plastic wrap and refrigerate overnight.

To make this dish, start by preheating the oven to 350 degrees. Next, combine two cups of all-purpose flour, one tablespoon of kosher salt, and one tablespoon of freshly ground black pepper in a large bowl. Take the chicken pieces out of the buttermilk one by one and coat them thoroughly with the flour mixture.

Pour vegetable oil into a large heavy-bottomed stock pot to a depth of one inch. Work in batches by carefully placing chicken pieces in the oil. Fry for approximately three minutes on each side until the coating is light golden brown. Remove the chicken pieces from the oil and place on a metal baking rack on top of a sheet pan. Bake for 30 to 40 minutes.
