If you miss going out onto the streets for iftar delicacies, these simple bites will help keep the nostalgia going  

In India, we celebrate all cultural and religious days with food, sent by friends, relatives, neighbours and acquaintances who invite us to join in the spirit of the day or festival. We also enjoy the period leading up to a day of significance, in this instance Eid-ul-Fitr, which is considered the holiest day in Islam, and which will fall this year probably on May 11 or 12, depending on the position of the moon. Leading up to it is the current month of Ramzan, or Ramadan, during which many Muslims fast through the day and eat only before dawn and after sunset.  The meal before sunrise is called sehri and consists of rich, energy-boosting dishes to keep them nourished through the day; at sunset, prayers are offered for iftar.

Many of us across India have grown up enjoying delicious food at iftar. This year, when we cannot join other food enthusiasts on the streets for this yummy fare, turn out these interesting delicacies in your home kitchen.

Potato Roast with Walnut Masala Mix (main image)
This is an interesting variation on potato roast by Hemasri Subramanian

 

Ingredients

3 tbsp oil

4 potatoes, peeled and cut into wedges

2 tsp salt 

½ tsp turmeric powder

Crushed garlic 

Sprig of curry leaves 

 

For the walnut masala mix:

2 tbsp coriander seeds

1 tsp cumin seeds

1 tsp fennel seeds

1 tsp peppercorns

Cinnamon

8 Kashmiri chillies

¼ cup walnuts

 

Method

  1. To prepare the walnut masala mix, dry roast the coriander, cumin and fennel seeds, peppercorns, cinnamon, Kashmiri red chillies and walnuts in a pan on a medium flame for three minutes. Once it turns aromatic, remove from the flame, cool down, and grind to a fine powder. Set aside.  
  2. Add the oil to a wide pan, and fry the potatoes until half cooked. Add salt and turmeric powder, and fry until the potato wedges get a crisp layer. Add the masala mix. Toss to coat the potatoes completely in the masala. 
  3. Add the crushed garlic and curry leaves. Serve hot.

 

Dahi Walnut Kebab

Ingredients

½ cup roasted walnuts

Ghee, for shallow frying

For the kebab mixture:
1 cup hung yoghurt
1 tsp brown onion paste
1 tsp roasted walnut paste (blend a handful of roasted walnuts with a little water)
3 tsp grated paneer
2 tsp grated cheese
½ tsp chopped coriander leaves
½ tsp mint leaves
1 to 2 green chillies, chopped

½ tsp roasted cumin 

½ tsp fennel
½ tsp finely-chopped ginger
Salt, to taste


Method

  1. Mix all the kebab mixture ingredients to a thick paste. Refrigerate for a half-hour.
  2. To prepare the crust, roughly blend the half cup roasted walnuts, and spread out on a flat tray.
  3. Take dollops of the dahi kebab mixture, and coat them with the  prepared crust.
  4. Heat the ghee in a hot pan, and shallow fry the kebabs. 

Walnut Paneer Kebab

Cottage cheese kebabs with a difference from
Hemasri Subramanian. Using walnuts in the recipe gives a great texture and crunch to the kebab. 

Ingredients

1 cup walnuts

200 g paneer

3 cloves garlic 

Ginger

2 green chillies 

Coriander leaves

Mint leaves

½ tsp salt

1 tsp Kashmiri chilli powder

1 tsp coriander powder

1 tsp chaat masala powder

½ tsp amchur powder

½ tsp garam masala powder

1 tsp cumin seeds

Ghee, for frying 

Method

  1. Toast the walnuts until golden brown;  this brings out their nutty flavour. Place in a food processor and pulse a few times. Add the paneer, garlic, ginger, green chillies, coriander leaves, mint leaves, salt, chilli,  coriander, chaat masala, amchur and garam masala powders, and cumin seeds, and grind to a coarse mixture. Remove to a bowl.
  2. Make patties of the mixture, and set aside. 
  3. Heat the ghee in a pan, and shallow fry the patties until golden brown. 
  4. Serve the kebabs hot with a mint-mayo dip.
