Anyone who has spent time in an electric pressure cooker Facebook group or searched for recipes on Pinterest has likely come across a variation of this chicken recipe before.

It's often called crack chicken, because it's supposedly so good a person can't stop eating it. I'm not a huge fan of equating food to highly addictive drugs for a number of reasons, but also, I didn't think this chicken was that good.

It's good, don't get me wrong. And it's quick and easy to make, so score another point. But does it deserve to be compared to crack cocaine? I don't think so.

This chicken recipe is good because cream cheese, bacon and ranch seasoning are all delicious. Anything is going to be good with cream cheese, bacon or ranch. So put them all together with some shredded chicken and cheddar cheese and of course it's going to be tasty.

Everything about this recipe makes it a highly palatable food. You have fat in the bacon and the cream cheese and salt in the bacon and the ranch seasoning, so of course this is going to be yummy on a bun.

With a heat wave settling over northeastern South Dakota, the last thing I want to do is turn on the oven or spend too much time over a stove. When looking for slow cooker or electric pressure cooker meal ideas, this chicken recipe once again entered my radar.

I like that this was a dump-and-done type recipe. Aside from taking the chicken out to shred it, there really isn't much work beyond frying bacon, shredding cheese or throwing everything in the pot.

I was a little nervous when the recipe only called for half-cup of water. This recipe has been around since the early days of the electric pressure cooker, and newer models require at least a cup of water or the dreaded burn message comes up.

I kept waiting for it to say "burn," but luckily it made it all the way through. I might do broth rather than water next time for the extra flavor.

Overall, this is a classic combination of chicken, bacon and ranch with cheddar cheese. It's good in a wrap, it's good on a pizza, and it's good blended together with melted cream cheese and served on a bun.

It's a great weeknight meal. Just add a lettuce salad or some steamed veggies and get on with your evening.

Will I be making this again? Yes. It's really good to take to a party

Would I pawn my TV for more? No. That's dumb.

Chicken bacon ranch sandwiches

Ingredients

  • 6-8 slices of cooked bacon.
  • 2 pounds boneless chicken breast or thighs.
  • 1 packet ranch dip seasoning.
  • 8 ounces cream cheese.
  • 1/2 cup water.
  • 1 cup shredded cheddar cheese.

Instructions

  • Cook bacon to desired doneness on the stove top, set aside on a paper towel to cool.
  • Add half-cup of water to the inner pot of an electric pressure cooker or slow cooker, add chicken, cream cheese and sprinkle ranch on top.
  • Set the pressure cooker to pressure cook for 15 minutes. When time is up do a quick release.
  • In the slow cooker, cook for six hours on low or until chicken has fully cooked and cream cheese is melted.
  • Remove chicken and shred.
  • Return chicken to the pot, along with bacon and cheese, stir everything together.
  • Serve on buns as a sandwich filling or with crackers as a dip.
