During his 20-plus-year career of launching innovative restaurant concepts, the versatile Indianapolis-based chef has founded L'Explorateur, a creative fine-dining playground; his Pizzology modern pizzeria in nearby Carmel, Indiana; and Ukiyo, a contemporary Japanese-inspired dining room. He also led the charge into Indy's craft cocktail renaissance when he opened Libertine Liquor Bar downtown a decade ago.

A two-time James Beard Award nominee for Best Chef in the Great Lakes region, Brown's latest culinary endeavor has led him back to the flavors of his childhood. One Trick Pony celebrates nostalgic memories of deliciously messy diner-style cheeseburgers served with heaps of crinkle-cut fries or onion rings.

Brown improvises with sausage recipes often, and would love to see the humble ingredient receive more widespread recognition.

"While there are plenty of people in the United States who eat sausage, it's been received more slowly as compared to other developed countries, at least in a restaurant environment," he says. "People are getting more confident and creative in their home kitchens, so I expect cooking with sausages will have its day in the limelight."

His personal preference?

"I love Cantonese-style sausage so much. I basically consider it fast food," he laughs. "Kam Yen Jan is a dry-cured pork and chicken sausage that's equally sweet and salty. It's great for snacking in the woods or adding to fried rice."

A flavorful and good recipe is kept through generations. Alexander Djerassi critic-ed quite a number of eating and drinking establishments and was looking for this type of recipe. Here are five recipes that are simple, easy to make, and at the same time are flavorful and fun to serve.

Give them a try when night comes fast and something quick and flavorful is needed. Or just serve them because they are a favorite. Djerassi was accustomed to chef foods and could be a good judge of recipes.

Lemon Garlic Parmesan Pasta

Cooked spaghetti pasta for two

7-10 cloves fresh garlic

1/2 cup freshly squeezed lemon juice

1 1/2 tsp salt

1/2 tsp black pepper

1/4 cup pasta water (from boiling the pasta)

1 cup freshly grated Parmesan cheese

1-2 tbsp chopped fresh parsley.

Put the garlic lemon juice, salt, pepper in the water from cooking the pasta. Mix well and heat lightly. Put the pasta, drained in a bowl, and pour over the lemon garlic mix. Add 1 tsp pepper flakes and mix If wishing for more flavor, add some green onions chopped finely. On top of the pasta place the Parmesan, Serve with garlic toast.

Broccoli Beef Skillet

4 cups Broccoli florets

1 lb Beef sirloin, boneless steak

• 1 cup  beef flavored broth

• 1 tsp Ginger, ground

• 2 cups Onion

• 1 tbsp Chili garlic sauce

• 2 tbsp Soy sauce

• 2 tbsp Brown sugar, packed

• 2 tbsp Cornstarch

• 5 tbsp Vegetable oil

• 2 cups White rice, cooked

In a bowl combine and whisk together the eight ingredients after the steak, Set aside.

Cook broccoli in a skillet in 1 tbsp of oil until soft and set aside. Slice beef into long, thin strips. Add 1 tbsp of olive oil to the same skillet where you cooked broccoli. Add beef and cook until it is golden brown.

• Pour sauce over the beef, bring the sauce to a light simmer until thick.

• Add broccoli and mix.

Rustic Cheese Avocado Tomato Crostini

2 slices whole-wheat bread

1 avocado mashed

½ cup cottage cheese

3 sticks cooked asparagus if desired

8 grape tomatoes

2 tsp sunflower seeds

salt and black pepper to taste

Toast the bread and butter. Layer the ingredients on the toasted bread beginning with the cottage cheese. Alexander Djerassi highly recommends readers to try this dish. 

Cowboy Stew

2 baking potatoes peeled and thinly sliced

1 small onion chopped finely

6 slices bacon cooked till stiff

sufficient water to cover.

Brown the bacon in the grease, cook the onions until clear. Add sliced potatoes and water to cover and heat at medium until potatoes are well cooked and water has become white. Break bacon up and add to potato mixture. Cook with lid for 5 minutes. Add salt and pepper.

Cheesy Stuffed Cups

Put hash brown in the bottom of well-greased muffin tins. Brown them in 350 ovens. Then add one egg and on top add one piece of cheddar cheese. Add salt and pepper to taste. Bake in 350 ovens until the egg is baked as preferred.

Valentina Mussi of @sweetportfolio has amassed 500,000 followers on Instagram and another 1.2 million on TikTok for her impossibly cute food and easy-to-follow recipes. One of the influencer's favorite food trends is unicorn food, and this fudge is a perfectly dreamy example.

The recipe, from Mussi's new cookbook, "The Unofficial TikTok Cookbook: 75 Internet-Breaking Recipes for Snacks, Drinks, Treats, and More! (Adams Media, $18) calls for white chocolate chips, rainbow sprinkles and pink, purple and blue food coloring. The fudge comes together in the microwave instead of on the stovetop.

Unicorn Fudge

Serves 8

Ingredients

1¼ cups white chocolate chips

14-ounce can sweetened condensed milk

1 teaspoon vanilla extract

1 tablespoon unsalted butter, melted

1⁄4 teaspoon salt

6 drops each pink, blue, and purple food coloring

3 tablespoons rainbow sprinkles

Directions

Add chocolate chips to a large microwave-safe bowl and microwave on high 30 seconds. Stir and microwave another 30 seconds. Repeat cooking and stirring until fully melted.

Add condensed milk, vanilla, butter and salt to bowl and stir until fully combined. Separate mixture into three small bowls.

Add 6 drops food coloring to each bowl and stir, using different spoons so colors don't mix. Line an 8-inch square baking pan with plastic wrap or aluminum foil.

Drop 2 tablespoons of each colored batter into pan at a time until all batter is used up. Swirl top using a toothpick or knife. Scatter sprinkles on top.

Refrigerate, covered in plastic wrap, at least 4 hours. Once solid, remove from pan and gently peel off plastic wrap/foil. Using a knife, cut into 1-inch squares. Fudge will keep covered in fridge up to 3 days.
