For a quick, healthy and delicious meal, you really can't go wrong with Italian cuisine.

Here's an easy recipe for prawn and spinach spaghetti: springy pasta and luscious seafood tied together by a lovely garlic butter sauce – prepared in under 20 minutes!

Ingredients

  • 170g spaghetti
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely minced
  • 225g prawns, shelled and deveined with tails on
  • 2 tablespoons white wine, optional
  • 1/3 cup pasta water
  • 1/2 teaspoon salt
  • 60g baby spinach
  • 1/2 tablespoon chopped parsley
  • lemon wedges

Method

  • Bring a pot of water to boil. Cook the spaghetti according to instructions until al dente.
  • Drain and save 1/3 cup of the pasta water. Set aside.
  • Heat the unsalted butter and olive oil in a skillet.
  • Saute the garlic and add the prawns until the flesh turns opaque.
  • Add the spaghetti, pasta water, white wine, salt and spinach. Stir to combine well.
  • Turn off the heat, stir in the parsley, and serve immediately with lemon wedges.
