
For a quick, healthy and delicious meal, you really can't go wrong with Italian cuisine.
Here's an easy recipe for prawn and spinach spaghetti: springy pasta and luscious seafood tied together by a lovely garlic butter sauce – prepared in under 20 minutes!
Ingredients
- 170g spaghetti
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 cloves garlic, finely minced
- 225g prawns, shelled and deveined with tails on
- 2 tablespoons white wine, optional
- 1/3 cup pasta water
- 1/2 teaspoon salt
- 60g baby spinach
- 1/2 tablespoon chopped parsley
- lemon wedges

Method
- Bring a pot of water to boil. Cook the spaghetti according to instructions until al dente.
- Drain and save 1/3 cup of the pasta water. Set aside.
- Heat the unsalted butter and olive oil in a skillet.
- Saute the garlic and add the prawns until the flesh turns opaque.
- Add the spaghetti, pasta water, white wine, salt and spinach. Stir to combine well.
- Turn off the heat, stir in the parsley, and serve immediately with lemon wedges.
