Ingredients

3 large chicken thighs (bone in, skin on, 5 ounces each)

Salt

Pepper

1 large head cauliflower, cored and cut into florets

1 large pear, cored and cut into 1/2-inch-thick wedges

Instructions

Heat oven to 400°.

Season chicken liberally with salt and pepper.

Heat a large, oven-safe skillet over medium heat. Add chicken, skin side down, and cook until skin crisps slightly and some fat is rendered, 3 minutes. Add cauliflower and pear. Toss to coat and arrange cauliflower and pear around pan, making sure chicken is skin side down. Transfer to oven and roast 15 minutes. Flip chicken, then roast 10 minutes more, until cauliflower and pear are soft and chicken is cooked through with no pink in the middle. Let rest 5 minutes before serving.
